Javalinks is a band of conscientious coffee drinkers.

We believe that the ways we choose to spend our coffee dollars makes a difference in the lives of coffee growers, the communities they support, and the environment in which they-and indeed we all-live. We like the economy of buying our coffee en masse, too!

As we set out to find a coffee company here at Renaissance we looked for a roaster using 100% certified organic arabica beans. We wanted the best quality bean for flavor and the organic certification for our health and the health of those employed in coffee farming. (Cancer rates spike in communities around coffee farms that utilize artificial pesticides and herbicides.) As we learned more about the economics of coffee, we also looked for a roaster using Fair Trade certified coffee, in hopes that more of our coffee dollars would go directly to small farmers to assure consistent living wages. Finally, as bird lovers we know that large tracks of Pacific Northwest migratory birds' winter habitat are being destroyed to create massive coffee plantations in Central and South America, to the peril of our beloved song birds. We were encouraged to learn that the Smithsonian Institute's Migratory Bird Center is certifying coffee farms that maintain original plant biodiversity, and thus bird habitat, on their coffee farms.

Javalinks is all about making this triple-certified coffee available to people who love coffee and want our daily coffee dollar to enhance the environment and the lives of others.





While large grocery store chains have made organic coffees widely available, the quality is not always consistent, variety is often limited, and the costs are high. More importantly, while grocery stores may carry organic and fair trade coffees, rarely can one find coffees in a grocery store--even in our natural foods grocery stores--that carry the "Bird-Friendly" certification. For those who value the coffee-buying power to maintain rich biodiversity in Central and South America, this is a key factor in choosing a coffee.

Our coffee-buying club lets us obtain organic, bird-friendly, fair trade, and consistently delicious coffees at a reasonable cost.

You can call in your order during Renaissance business hours, order on line, or best: come in for a cup of coffee and order in person. The minimum order is one pound, there's no maximum and you can order any coffee or combination of coffees on our list. Submit your order by start of business on Fridays for pick up a week later.

We send our order to Caffe Ibis on Friday morning. They throw our beans in the roaster. Once roasted to perfection they let them rest, then pack 'em up, and send them off for arrival at Renaissance by the following Friday. Super Fresh!

That makes Saturday a perfect day to pick up your beans (though you may pick up your beans any day you'd like Monday through Saturday).

Every second Saturday will be Javalinks Day at Renaissance where we will be celebrating coffee with free coffee tastings-a great way to sample all the Caffe Ibis coffees-and other caffeinated activities (open to members and non-members alike, bring your friends!).





Caffe Ibis has been roasting delicious coffee for 25 years. Only roasting masters are allowed near their beans and it shows: these people know how to match the roast to the bean. Light, bright coffees from Mexico are treated carefully; roasted just enough to coax their subtle flavors from the bean. The complex, full-bodied coffees from Indonesia are treated to a more robust roast, just right for complementing these rich beans.

The variety at Caffe Ibis is terrific. We can drink coffees from the classic coffeelands as well as new, emerging coffee producers. We can also drink a variety of decaffeinated coffees that are organic, fair trade and bird-friendly certified. All of the Caffe Ibis decafs are Swiss Water Processed so no harmful or flavor-destroying chemicals are introduced to the coffee.

But roasting excellence isn't the only quality to seek in a coffee roasting company. Necessary, but not sufficient. Today, we understand that coffee drinking is a powerful force in the economic, political, health, and environmental arenas. This fact is what leads us so strongly to Caffe Ibis.

In addition to being committed to offering 100% certified organic coffee-helping to assure sustainably-grown coffee--the owners of Caffe Ibis are some of the trail blazers and nurturers of the fair trade coffee movement. Their coffees are certified by TransFair USA, the only third-party certifier of fair trade products in the US.

For those of us concerned about Pacific Northwest migratory birds and other animals in Central and South American coffeelands, Caffe Ibis represents our only local option for purchasing coffee certified by the Smithsonian Institute as "bird friendly". The Smithsonian certification assures us that the biodiversity necessary to sustain North American songbirds while in Central and South America is maintained in the coffee farms with this certification.

The Smithsonian Migratory Bird Institute has, until recently, focused its certification energies on Central and South America--the winter homes of North American songbirds. Subsequently, only coffees grown in the Americas hold the Bird Friendly certification. We've noted these in the list below with a bird (). We're happy to report that this includes coffees across the roasting spectrum, from the light, bright Mexican Chiapas to the carmelly, rich French Roast. More good news: The Smithsonian's work is expanding to Indonesia and Ethiopia. We'll stay abreast of this work as it develops.

Mexican Chiapas: Our lightest, brightest coffee. This is the coffee you'll want to drink iced, or hot on a sunny morning filled with vibrancy and light. Or, on a day when you're reminiscing about the sunny days of summer. Enjoy its subtle, spicy aroma, light body, light acidity, and clean, smooth finish. Taste a hint of chocolate and nuts.

Decaf Mexican Chiapas: You'll love this Swiss Water Processed Mexican Chiapas. It's light and bright, and you can rest assured that your coffee has been decaffeinated in the safest way possible. We can't tell the difference between decaf and regular.

Peruvian Rainforest: This comfort food of coffees is grown on the eastern slopes of the northern Andean Rainforest. It has a delicate acidity, medium body and a delightful, subtle sweetness. The floral overtones are unmistakable!

Columbian Incan Harvest: Mmmmmmm…Columbian Incan Harvest is likely to become your everyday coffee, cherished for its consistency and good, solid body. But, you also won't miss its brightness, sweetness, a floral aroma, with a smooth finish.

Guatemalan Forest: Grown in the mountains overlooking stunning Lake Atitlan and colourful Mayan villages, this light to medium-bodied coffee is lively in the cup, slightly sweet, and aromatic. Costa Rica Monteverde: Mmmmmmm, imagine awaking in the Monteverde Cloud Forest to the smell of this rich, dark-roasted, medium-bodied coffee (yes, someone very nice got up before you to start the coffee), tropical birds and monkeys call in the distance. You'll love this coffee's sweetness and its complexity. You'll find yourself devising ways to get yourself south to the tropical wonderland of its origin.

Mayan Sunrise: Enjoy this blend created by Caffe Ibis roasters. It combines light and dark-roasted coffees to make a complex, smooth coffee that finishes with a touch of sweetness. Wildly aromatic. Yum!

Aztec Dark: This hearty blend of South and Central American coffee beans is being treated to a bit darker roast and they stand up beautifully! So beautifully, in fact, Aztec Dark gives our most popular coffee--Sumatra Dark--some competition among true blue coffee drinkers. You'll find Aztec Dark complex and tasty, but light and bright rather than syrupy and rich, without a hint of the "burn" that dark-roast coffee drinkers love. Smooth, very smoooooth.

Decaf Aztec Dark: Enjoy the Swiss Water Decaffeinated version of this luscious, dark-roasted, medium-bodied coffee. You'll find it smooth, slightly sweet, earthy, and best of all, bird friendly!

Cafe Femenino: Renaissance is proud and fortunate to offer this very special organic Fair Trade coffee. Café Femenino begins with beans from woman-owned and operated farms along the Incan trail in the Peruvian Andes. This women's coop represents a growing opportunity for world-wide coffee drinkers to enjoy our passion while creating living wage jobs and community resources in the Coffeelands. On top of its Fair Trade goodness, taste the subtle brightness, fruit notes, aromatic, medium body, and clean finish of this fine organic coffee.

Timor: The first taste you'll notice in this delicious brew is the sweetness unique to Timor's coffees. You may detect a fruity highlight as well. But fear not, the rich, syrupy characteristic of Indonesian coffees is there, too, making this a full, complex cup that will delight you.

Vanilla Nut: We're happy to be offering this 100% organic coffee to our guests who enjoy flavoured coffees. Try this medium bodied coffee with the finest Madagascar vanilla and rich, savory hazelnut. Highland Sumatra Dark Roast: This Renaissance staff favorite is organically grown and processed in Indonesia.
